Dear Margaret,

Yesterday was practically all occupied with inspections. We had three separate and distinct groups of "visiting firemen" as the inspectors are called. We apparently came out all right with less than the usual constructive criticism. In the evening we went to the Officer's Club. They have a soldier who was a bartender in civilian life working there, and he makes wonderful Tom Collins. That's the great thing about the Army. In any group you can find one man to do anything.

TOM COLLINS

1 1/2 tablespoons fresh lemon juice
1 1/2 teaspoons superfine sugar
1 1/2 ounces (1 jigger) gin
club soda or seltzer water
1 lemon slice for garnish

In a tall glass stir together the lemon juice and the sugar until the sugar is dissolved, add the gin and enough ice cubes to fill the glass, and stir the drink well. Top off the drink with the club soda or the seltzer water, stir it well, and garnish it with the lemon slice. Makes 1 drink
