Large Kolatch (Sweet Dough)

Ingredients:
2 cups milk, scalded to lukewarm
1 tbs. salt
3/4 cup margarine
1 cup sugar
2 tbs. butter
4 eggs, beaten
3 packets dry yeast
10 cups flour (approx.)
If desired, a pinch of anise seed may be added to dough.
Heat milk to scald. Put aside to cool and add margarine and butter to melt. Beat eggs, add little warm mixture to eggs, beating as added. When lukewarm, add yeast. Let sit about 5 minutes.
Mix flour, salt and sugar together and add. Add enough flour for right consistency (not sticky and not dry). Grease top of dough and let rise until double in bulk.
One recipe will make about 11 long rolls (Ruth made 6) depending on how thin you roll the dough. Spread with desired filling and roll up like jelly roll. Bake at 350 degrees until lightly browned.
For one recipe, some fillings you could use:
- Walnut - about 4 rolls
1 lb. walnuts, ground
Melted margarine
Honey
Egg or egg white
Brown sugar, white sugar
Grated lemon rind, if desired
Vanilla
- Poppyseed - about 2 rolls
1 jar poppyseed filling
Pinch of sugar
Ground raisins
A little honey
Tapioca (about 1 tsp.)
- Apricot - about 2 rolls
- Prunes (lekvar) - about 2 rolls
1 jar apricot filling
1 jar prune filling
- Ricotta cheese
Add beaten egg yolk
Nutmeg
Sugar to taste
A few raisins, if desired
